One of the oldest methods that has been used for bulk oils and fats is known as the Rancimat or oxidative stability index (OSI) test (Talbot, 2011).
Because the OSI/Rancimat method is not suitable for products containing water or solid foods, an alternative method, called the Oxipres(tm), was developed (from Mik- rolab Aarhus, Denmark).
